The Hopkins Backup Sensor System part # HM60100VA does not allow for anyone to control the volume of the alarm. That said, if you ever don't want to hear the alarm you can easily unplug this and then plug it back in when needed. There are some things to consider first. I do not recommend pulling the fuse for the back up sensors or disconnecting anything in the system because there may be a time when you forget to reconnect it and you might need it.
Also, the sensors and alert should only go off when you are in reverse. While driving forward, the alarm should not go off. So you have to consider how much you will be backing up and if that is really enough to make you want to disable the system.

What you could do to install this Surface Mount Back-up Alarm # BK97DB is install it inline with the purple wire of your 7-way. You would cut the purple wire and then attach one end of the wire to one of the contact studs and then attach the other wire to the other stud, and then when there is voltage on this circuit the voltage will run through the # BK97DB activating the alarm and then go to the 7-way.

It's pretty safe to assume that anything installed on the rear of your 2019 Mercedes-Benz Sprinter 2500, including the Thule Elite Van XT # TH302043, will be in the way of your backup camera which will set off that alarm. This is just the nature of backup cameras/sensors and the only way to get around this is by disabling the alarm, but you will want to make sure you set the alarm back to "on" when you aren't carrying the bike rack.

With no bikes loaded on your rack, the sensors would not detect the rack and go off. With bikes loaded, most likely the sensors would sense the bikes. The sensors are only active when you are in reverse though. So it's not like you would have to deal with them going off all the time. You would just have to be extra careful when backing up and be mindful of the additional length of the bikes and rack off the back of your vehicle.
